Plum cake

INGREDIENTS
• 150 gr sugar
• orange peel and / or lemon (to taste and only the colored part, than the bitter white)
• 150 gr butter (Let it out of the refrigerator about 1 hour and a half before to soften)
• 3 eggs
• 170 grams of sifted flour
• 1 pack of baking powder
• 1 tablespoon vanilla extract
• Raisins and chopped dried apricots (soaking in rum or orange liqueur overnight)
PREPARATION
Preheat oven to 180 º C.
Pulverize sugar and the orange/ lemon 5-7-9, 30 sec. Put the butterfly and add the butter, mix for about 50 seconds, speed 2 and 1 / 2.
Maintain speed, 2 and 1 / 2, and adding the eggs 1 by 1, do not add the second one until the first is well incorporated.
Mix the flour with baking powder and add while still turning at the same speed. Also add vanilla.
Flour raisins and dried apricots so that cooking does not fall to the bottom.
Place the dough into a cake pan and add the raisins or dried apricots. Bake at 180 º C, 60 min.
Unmold while it’s hot and place on a wire rack to cool.
